Bettina's Kitchen Phyco-Flatbreads

 "I LOVE boosting delicious recipes and making them better for you. Just by adding-2 tbsp of Phybre from PhycoHealth into the delish flatbread dough and you will boost your fibre intake to 40% of what you need each day at a minimum. So something we all love, like cheesy flatbreads, smoothies or cereals, can now be a high fibre source and delicious and the taste is super neutral. The secret minerals of the sea sneak in there too - Magnesium, Boron, and just the right amount of iodine.

I also added a good drizzle of olive oil to finish along with a sprinkle of Phukka which is the equivalent of Dukkkah (With added seaweed)!

Ingredients/

175 grams of self-raising flour, plus extra for dusting
1 teaspoon baking powder
100 grams of grated cheese
1-2 tablespoons of PhycoHealth Phybre
160 grams of natural yogurt
Olive oil for brushing
Sprinkle of Phukka

Method/

In a large bowl, mix together the self-raising flour, baking powder, and PhycoHealth's Phybre. Add the natural yogurt and mix until the dough starts to come together.

Turn the dough out onto a lightly floured surface and knead it for a few minutes until it becomes smooth and elastic. If the dough is a bit sticky, sprinkle on a little more flour.

Divide the dough into 4-6 equal pieces, depending on how large you want your flatbreads. Roll each piece into a ball, then use a rolling pin to flatten them into discs about 1/4 inch thick.

Place a tablespoon of grated cheese in the centre of each disc. Fold the edges of the dough over the cheese and pinch them together to seal, then gently flatten each ball again to form a disc.

Heat a non-stick frying pan over medium heat. Brush each flatbread lightly with olive oil on both sides. Cook each flatbread for about 2-3 minutes on each side, or until they're golden brown and puffed up, with the cheese inside melted and gooey.

As you cook the flatbreads, transfer them to a plate and cover them with a clean tea towel to keep them warm. Once all the flatbreads are cooked, sprinkle them with a bit of Phukka for an extra burst of flavour.
